What is the best part of apple cobbler? The cobbles, right?! And everyone knows that pancakes are really just pillows to rest topping on. Do you see where I am going with this?
Pancakes with Brown Sugar-Banana Syrup and Cobbles
Bisquick Pancakes - no need for any fancy shmancy pancakes here. This is just 2 cups bisquick, 1 cup milk, and 2 eggs. (I did dress mine up a little by adding a 1/2 tsp of vanilla, Tbsp of sugar, and a tsp of lemon juice, but I'm an oddball)
1/2 cup oats
1/3 cup sugar
1/4 cup brown sugar
dash of salt
2 Tbsp flour
4 Tbsp butter
Now put oats in a saucepan with sugars, salt and flour. Add the butter and stir constantly until the oats are lightly toasted.
Now for the banana syrup:
Two bananas
1/4 cup brown sugar
2 Tbsp butter
1/3 cup water
2 Tbsp flour
Slice the bananas into thin slices and combine with remaining ingredients. Cook over medium heat for about 5 minutes and then remove from heat. It should thicken upon standing.
